ABOUT THIS COFFEE

Swiss water process uses a no-chemical method to remove coffee's natural caffeine content.

The Mogiana region, which runs along the São Paulo and Minas Gerais border, is home to some of the most consistently sweet and well-structured naturals produced in Brazil. The region boasts 3500 farmers cultivating a combined area of 202,000ha. Our supplier hand-selects lots from individual farms and processes them to create a smooth, clean, highly consistent end product. Our goal with this coffee is to have a consistent profile from lot to lot, and year to year, making our Eagle Mogiana a coffee that you can rely on year-round.

The Swiss Water Process (SWP): This method was originally pioneered in Switzerland in the 1930s. Green Coffee Extract (CGE) is water soluble and allows for the caffeine molecules to transfer from the green coffee to the CGE from the surrounding gradient pressures. Once the GCE has contains most of the caffeine, it is then seeped into carbon absorbers which remove the caffeine molecule from the GCE. The GCE is then used again to take out the caffeine contents from the green bean and the process is repeated until 97% or more of the caffeine is removed.
